How to make chicken Shawarma at Home: Taste of Traditional Middle Eastern street food

Shawarma is a popular dish originating from the Middle East. Traditionally, it’s a street food made in the form of spiced meats that are stacked on a vertical rotisserie with thin slices shaved off as it rotates. The meat is usually chicken, beef, lamb or turkey. It’s commonly served in the form of a wrap, though in some countries you see it served on plates with sides such as seasoned rice or fries, and salads.

 What I love about this recipe is its versatility. You can make it with any meat you prefer, and the combination of spices used gives it a unique and flavorful taste. Plus, it’s easy to make at home without needing a special rotisserie.

⭕️ 1 kg of chicken thigh fillets (skinless and boneless)
⭕️ 1 large garlic clove (minced)
⭕️ 1 tablespoon ground coriander
⭕️ 1 tablespoon ground cumin
⭕️ 1 tablespoon ground cardamom
⭕️ 1 teaspoon ground cayenne pepper (reduce to ½ tsp to make it less spicy)
⭕️ 2 teaspoons smoked paprika
⭕️ 2 teaspoons of salt Black Pepper
⭕️ 2 tablespoons of lemon juice
⭕️ 3 tablespoons of olive oil
⭕️ 1 cup Greek yoghurt
⭕️ 1 clove garlic (crushed)
⭕️ 1 teaspoon cumin
⭕️ Lemon Juice (squeeze)
⭕️ Salt and pepper
⭕️ 5 flatbreads (Lebanese or pita bread or homemade soft flatbreads)
⭕️ Lettuce (sliced, cos, or iceberg)
⭕️ Tomato (slices)
⭕️ Red onion (finely sliced)
⭕️ Cheese (shredded, optional)
⭕️ Hot Sauce of Choice (optional)
1 In a large pot, combine the garlic, ground coriander, ground cumin, ground cardamom, ground cayenne pepper, smoked paprika, salt, black pepper, lemon juice, and olive oil.
2 Add the chicken thigh fillets to the mixture and turn to coat. Cover and marinate in the refrigerator for at least 4 hours or overnight.
3 Preheat your oven to 350 degrees F (175 degrees C).
4 Place the marinated chicken thighs on a baking sheet and bake for about 20 minutes, or until the chicken is cooked through.
5 While the chicken is cooking, prepare your Greek yoghurt sauce by combining Greek yoghurt, crushed garlic, cumin, lemon juice squeeze, salt, and pepper.
6 Once the chicken is done cooking, slice it into thin strips.
7 To serve, spread some Greek yoghurt sauce on a flatbread.
8 Add some lettuce, tomato slices, red onion slices, shredded cheese (if using), and hot sauce of choice (if using).
9 Top with the sliced chicken, and roll up the flatbread.
