Maqluba is a traditional Palestinian dish.It's wholesome and delicious. Often referred to as the national dish of Palestine! The main ingredient in Maqluba is rice, which is mixed with fried cauliflower, eggplant, potatoes, and meat. In Arabic, Maqluba (Makloubeh or Maqlooba) means “Upside Down” since we take the pot and flip it upside down directly on the large plate. The dish is then garnished with fresh parsley or cilantro and extra sumac, which adds flavor. It’s served warm and can be eaten as is or with a side salad or vegetables.

⭕️ 2 ½ cups long-grain or basmati rice ⭕️ 1 ½ pounds lamb chops or dark meat chicken with the bones ⭕️ Garlic powder ⭕️ Salt and pepper to taste ⭕️ 2 tsp allspice, divided ⭕️ 2 large heads cauliflower ⭕️ 2 large onions, sliced (or 3 medium onions) |
1 In a saucepan over medium heat with 1 tablespoon vegetable oil, sauté the onions and the meat, stirring for a few minutes, until the meat is browned on all sides. 2 Then add the salt, black pepper, allspice, cardamom, and bay leaves. 3 Add 6 cups (1.5 liters) of water, then cover the pan and simmer until the meat is cooked, about 1 hour to 2 hours. 4 Layer the bottom of your maqluba pot with sliced tomatoes first, then add your long aubergine slices and line the sides of your pot. 5 Add a layer each of rice, potatoes, lamb, rice, aubergine circles, lamb, and rice. 6 Continue to repeat until the final layer is a layer of rice. |
